Louise Slice


From the source of book named slices biscuits & cakes by robyn martin (an excellent must have recipe book by the way!), I made this cakes on one lazy sunday afternoon. A perfect companion for a cup of tea or coffee.


Ingredients:

100g butter (got no butter, i used margarine instead)
1/4cup sugar
2eggs
1 1/2cups flour
2tsp baking powder
1/2cup raspberry jam (dun have also, i used strawberry jam)
1/2cup sugar
1/2cup coconut (If u like more coconut, can increase)


Method:
Melt butter in a saucepan large enuff to mix all ingredients. Stir in first measure of sugar. Separate eggs, Add yolks to saucepan and mix until combined. Sift flour and baking powder into saucepan. Mix to combine. Spread mixture into a greased 20 x 30cm sponge roll tin. Spread jam over base. Beat egg whites until stiff. Mix in second measure of sugar and coconut. Spread over jam. Bake at 180c for 25 to 30mins or until cooked and golden. Cut into squares or fingers while stil warm.

Banana Cupcake

Ini post pertama di blog-ku yang ini. Ajang coba2 yang pengen digelutin lebih serius. Setelah ngeliat banyak temen2 yang laen jago2 didunia per-baking-an, jadi tergiur pengen mencoba. Kalo dipikir2 apa salahnya juga untuk coba menggeluti hobi yang baru. Toh menghasilkan sesuatu yang positif, selain itu setelah jadi ibu RT pekerjaanku hari2 juga gak jauh jauh dari masak memasak.
Berikut adalah resep cupcake pisang yang paling aku doyan. Teksturnya lembut, agak padat, dan moist banget, manis nya pas.
The best recipe of banana cake yang pernah aku coba. Resep aslinya pake loyang bundar biasa, tapi supaya lebih ringkes makan nya, aku pake cetakan cupcake.
Resep versi bahasa inggrisnya:
150g butter
1cup sugar
2 eggs
1 cup mashed banana
2 cup flour
1 tsp baking powder
1 tsp baking soda
2 tbs milk
Melt butter in a mixer bowl in the microwave or over hot water. Add sugar, eggs and mashed banana. Mix on low speed to combine. Sift in flour and baking powder. Dissolve baking soda in milk and add to the mixer bowl. Beat on low speed to combine. Increase the speed to medium and beat for 2 minutes. Pour mixture into baking -paper lined 20cm round cake tin. (I used cupcake liner). Bake at 180c for 35min or until cake springs back when lightly touched. Leave in tin for 5minutes before turning on a cooling rack.
